Spinach and Tofu Stir Fry

Ingredients:

100g firm tofu, cubed
2 cups fresh spinach leaves, washed
1 tablespoon olive oil (or any preferred cooking oil)
1 small onion, sliced
2-3 cloves garlic, minced
1 teaspoon ginger, grated
1/2 teaspoon red chili flakes (optional)
Salt and pepper to taste
1 tablespoon lemon juice (optional for extra flavor)

Instructions:

1. Prepare the Tofu:
Drain the tofu and remove excess water. Cut the tofu into small cubes.

2. Stir-Fry the Tofu:
Over medium heat, warm up 1 tablespoon of olive oil in a pan. Add the tofu cubes and stir-fry them for about 5-7 minutes until they are golden and crispy. Remove form the pan and keep aside.

3. Cook the Aromatics:
If necessary, add a bit extra oil to the same pan. Stir in the ginger, garlic, and onion. For three to four minutes, stir-fry the onion until it becomes tender and aromatic.

4. Add the Spinach:
Add the spinach to the pan and stir until it wilts down, about 2 minutes. Season with soy sauce, red chili flakes, salt, and pepper.

5. Combine Tofu and Spinach:
Add the crispy tofu back into the pan. Toss everything together gently, making sure the tofu is coated with the flavors.

6. Serve:
Drizzle lemon juice or vinegar over the stir fry for extra zest.
