Protein-Rich Khichdi

Ingredients :
2 tablespoons yellow moong dal
2 tablespoons black chana (kaala chana)
2 tablespoons masoor dal (red lentils)
2 tablespoons urad dal (split black gram)
¼ cup quinoa
1 teaspoon methi seeds (fenugreek seeds)
2-3 tablespoons green sprouts (mixed)
3 cups water
½ teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon grated ginger
1 chopped green chili (optional)
1 medium chopped onion
1 medium chopped tomato
¼ cup chopped carrot
¼ cup chopped capsicum
1 tablespoon olive oil
Salt to taste
Fresh coriander leaves for garnish
Preparation Steps :
1. Soaking:
Wash and soak yellow moong dal, kaala chana, masoor dal, urad dal, quinoa, and methi seeds in water overnight.
Drain and rinse in the morning.
2. Cooking the Khichdi:
Heat oil in a pressure cooker or pan.
Add cumin seeds and let them splutter, then add grated ginger and green chili.
When the onions are chopped, add them and cook until golden.
Mix in chopped tomatoes, carrot, and capsicum, then cook for 2-3 minutes.
Add the soaked lentils, quinoa, methi seeds, and green sprouts.
Sprinkle turmeric powder and salt.
Pour 3 cups of water, mix well, and pressure cook for 3-4 whistles (or cook in an open pan until soft).
3. Final Touch:
Once the pressure releases, mix well and garnish with fresh coriander leaves.
Serve hot with low fat curd.
