Methi Matar Sabji

Ingredients:

1 cup fresh fenugreek leaves (methi), chopped
1/2 cup fresh green peas
1 tablespoon olive oil
1 small onion, finely diced
1 green chili, slit lengthwise (optional)
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
Salt as per taste
Chopped fresh coriander leaves for garnish
Water as needed

Instructions:

1. Heat the Oil:
In a non-stick pan, heat the olive oil over medium flame. Allow the cumin seeds to crackle after adding them.

2. Sauté the Onion:
Toss in the green chili and finely chopped onion. Sauté until the onions are golden brown, about 5-6 minutes.

3. Add Spices:
Mix in the turmeric powder, ground cumin,coriander powder, and salt. Stir for 2 minutes to ensure the spices are well combined and aromatic.

4. Add Peas and Fenugreek Leaves:
Stir in the green peas and let them cook for 3-4 minutes. Next, add the chopped fenugreek leaves and cook for another 3-4 minutes, stirring occasionally.

5. Cook Until Soft:
If you need to keep it from sticking, add a little water. Cover the pan and allow the vegetables to cook for 5-7 minutes or until the peas are soft and the methi is well-cooked.

6. Finish and Garnish:
Sprinkle garam masala over the dish and mix thoroughly. Garnish with fresh coriander leaves.

7. Serve Hot:
Enjoy this healthy methi matar sabji warm, paired with roti or as a side dish.
