Cucumber Boat Salad

Ingredients:
2 medium-sized cucumbers
1/2 cup low-fat Greek yogurt
1 tablespoon fresh lemon juice
1 tablespoon finely chopped fresh mint leaves
1 tablespoon diced red onion
1 tablespoon diced tomatoes (optional)
Salt and black pepper to taste
1/4 teaspoon roasted cumin powder (optional)
1/4 teaspoon chili flakes (optional)
Instructions:
1. Prepare the Cucumbers:
Rinse the cucumbers well and pat them dry. Slice them lengthwise into two halves and carefully scoop out the seeds with a spoon to create a hollow “boat” shape.
2. Make the Filling:
Greek yoghurt, lemon juice, mint, red onion, and tomatoes (if used) should all be combined in a mixing bowl . Add a pinch of roasted cumin powder, salt , pepper and chili flakes . Combine all the ingredients thoroughly until evenly mixed.
3. Stuff the Cucumbers:
Fill each cucumber boat with the yogurt mixture, spreading it evenly.
4. Serve:
Add a garnish of mint leaves or a sprinkle of roasted cumin powder for extra flavor, if desired. Serve chilled for a light and refreshing dish.
