Mix Veggies Ragi Porridge

Ingredients (1 serving)
2 tbsp ragi flour (finger millet)
1/2 cup mixed vegetables (carrot, beans, capsicum, peas) – finely chopped
1/2 tsp cumin seeds
1/2 tsp ginger (grated)
1/2 tsp green chili (optional)
1 cup water
1/2 cup low-fat milk or buttermilk (optional)
1/2 tsp ghee (optional)
Salt to taste
Fresh coriander leaves for garnish
Instructions :
1. Prepare the Ragi Slurry:
Mix ragi flour with 1/4 cup water to form a smooth paste without lumps.
2. Cook the Vegetables:
Heat ghee in a pan, add cumin seeds, ginger, and green chili.
Add chopped vegetables and saute for 2-3 minutes.
3. Cook the Porridge:
Add 1 cup water and let the vegetables soften.
Slowly add the ragi paste while stirring continuously to avoid lumps.
Cook on low flame for 5-7 minutes until the mixture thickens.
4. Add Milk/Buttermilk (Optional):
If using, add milk or buttermilk for a creamy texture.
5. Final Touch:
Add salt, mix well, and cook for another minute.
Garnish with fresh coriander and serve warm.
